Abstract

Kedelai non-GMO memiliki potensi besar sebagai bahan baku
utama dalam produksi tempe berkualitas tinggi yang aman, bergizi, dan ramah lingkungan. Melalui buku ini, penulis berupaya memberikan pemahaman komprehensif mengenai aspek ilmiah, teknologi, ekonomi, dan keberlanjutan dari penggunaan kedelai non-GMO, sekaligus mendorong transformasi industri tempe menuju arah yang lebih modern dan berorientasi ekspor.
